Ingredients

  • Jackfruit – 500 grams

  •  Onion – 2 large (finely chopped)

  •  Tomato – 3 chopped

  •  Ginger -1 inch grated

  •  Garlic – 10 cloves (paste)

  •  Bay leaves – 2

  •  Whole red chilli – 2

  •  Salt – ½ teaspoon

  • Turmeric powder – ½ teaspoon

  •  Coriander powder – 1 ½ teaspoon

  •  Red powder – 1 teaspoon

  •  Coriander leaves -½ small bowl

  •  Cumin powder – ½ teaspoon

  •  Garam masala powder – ½ tsp

  •  Kashmiri red chilli powder – 1 teaspoon

  •  Green chilli – 2

  •  Mustard oil – ½ cup

Directions

  • Applying oil to your hands before beginning to create the curry can aid in slicing the jackfruit since your hands will be less sticky.
  • Cut the jackfruit into large or tiny pieces based on your preference after peeling it.
  • Now give it a good wash and set it aside.
  • Heat the oil and cook all of these pieces over high heat until they are light brown. Then, remove from the oil and set aside on a dish.
  • Crackle some cumin seeds into this oil. Stir in the ginger, garlic, and onion as soon as the cumin seeds begin to crackle.
  • Cook all of these items over medium heat until they are golden brown. We’ll add tomatoes and sauté them till the oil separates and the colour starts to turn brown.
  • Next, thoroughly combine the coriander powder, salt, turmeric, red chilli powder, and garam masala powder.
  • Now add the jackfruit and green chillies, along with water (you may adjust the amount of water to suit your gravy). Fry it for a while while stirring occasionally.
  • After bringing it to a boil, lower the heat and simmer the veggie until the jackfruit is tender.
  • If the jackfruit is old or doesn’t soften adequately, set one whistle over medium heat.
  • Our hot jackfruit curry is ready to serve if we remove the vegetable in a ball, add green coriander and switch off the heat.

Notes

  • While jackfruit curry pairs well with paratha, you may also serve it with rice and roti if you’d like.
  • I have not included any whole spices in this recipe, but you are welcome to do so.
