Ingredients

  • Bitter gourd – 4 (250 grams)

  • Salt – 1 teaspoon (as per taste)

  • Mustard oil – 200 grams (if you eat less oil then you can increase or decrease it)

  • Cumin – 1 teaspoon

  • Whole red chilli – 1 or 2 (as per taste)

  • Green chilli – 2

  • Turmeric powder – 1 teaspoon

Directions

  • You may cut it as you choose; if you’d like, you can even cut it into circles.
  • After giving it a quick wash, roll it into a ball.
  • If the bitter gourd is too harsh for you or if you are preparing it for a kid, fill the same ball with clean water, season with salt, cover, and refrigerate for fifteen minutes.
  • After that, discard it by filtering it. This will eliminate all of the bitterness in the bitter gourd.
  • Heat the mustard oil in the pan over gas. We shall extinguish the flame when smoke begins to emerge from the oil.
  • Allow it to cool down before adding the cumin seeds and letting them crackle a little.
  • We’ll later add bitter gourd and dried whole red chillies to it.

Notes

  • I’ve included some lemon juice to make it sour. You may also add dried mango powder to it if you’d like.
  • Nothing has been added to make it crispy. similar to maize or rice flour. It has still been really crispy.
