Ingredients

  • Stale rice – 2 bowls

  •  Capsicum – 1 (finely chopped)

  •  Onion – 2 (finely chopped)

  •  Potato – 1 (finely chopped)

  •  Tomato – 1 (finely chopped)

  •  Garam masala powder – ½ tsp

  •  Green chillies – 3, slit from the middle

  •  Salt – ½ teaspoon

  •  Mustard oil – 2 teaspoons

  • Cumin – ½ teaspoon

  •  Turmeric powder – ¼ teaspoon

  •  Coriander powder – ⅓ teaspoon

  •  Soybean – 1 bowl

  •  Whole red chilli – 2

  •  Coriander leaves – for garnish

Directions

  • First, roll the soybeans into a ball, toss in a little water and salt, and cook for five minutes over high heat.
  • We will switch off the gas and set the soybean aside to cool once it begins to boil. Once it has cooled, drain any excess water and store the soybeans on a platter.
  • Conversely, fill the pan with oil and heat it. Add the cumin seeds as soon as the oil is heated. When the cumin seeds begin to crackle, we will add the entire red chillies and sauté them gently.
  • As soon as the scent begins to emerge, we will add the onions and green chillies and sauté them gently for approximately two minutes before adding the tomatoes.
  • The tomatoes will also be fried for one to two minutes. To ensure that the tomatoes cook rapidly, remember to add a little salt as soon as you add them.
  • Now add the remaining salt and turmeric powder, and thoroughly combine with the potatoes and capsicum.
  • The potato will be more than half-cooked during this time. We will lower the gas flame, cover and cook it for seven to eight minutes. Then, we will lift the lid and check to see whether the potato is done.
  • Next, add the rice, stir constantly, and cook for two to three minutes. Add the seasonings at this time.
  • Our fiery recipe for stale rice is now ready to be served; just add coriander leaves and serve.

Notes

  • You can cut back on the chilli if you don’t like it too spicy. Leave the chilli to slip if you are preparing it for kids.
