Ingredients

  • Large potatoes – 3

  • Gram flour (besan) – 250 grams

  • Rice flour (cornflour) – 2 tablespoons

  • Ginger-garlic paste – 2 tablespoons

  • Onion – 1 (finely chopped)

  • Green chilies – 4-5 (finely chopped)

  • Turmeric powder – ⅓ teaspoon

  • Chili powder – ¼ teaspoon

  • Coriander leaves – 4 tablespoons

  • Garam masala – ½ teaspoon

  • Salt – ½ teaspoon

  • Mustard oil – as required

  • Chaat masala – ¼ teaspoon

  • Carom seeds (ajwain) – ½ teaspoon

Directions

  • First, to make the potato chop, boil the potatoes and then peel and set them aside.
  • Now, to prepare the spices, place a pan on the stove and add a little oil to it.
  • As soon as the oil is hot, add the chopped onions and sauté them for a while.
  • Next, add ginger and garlic paste to it and sauté for one to two minutes. Then, add turmeric powder, chili powder, and garam masala and sauté for a while.
  • Now, add green chilies and coriander leaves and mix well.
  • Finally, add the mashed potatoes and salt to taste, mix well, and sauté for a while.
  • After about 2 to 3 minutes, the potato chop masala will be ready. Turn off the heat and set the masala aside to cool.
  • While the masala cools, prepare the gram flour batter.
  • For this, in a bowl, add gram flour, rice flour, salt, carom seeds, and a little turmeric powder. Gradually add water and prepare a thick batter. Be careful not to make the batter too thin.
  • Then, form small patties with the potato mixture.
  • Heat mustard oil or refined oil in a pan. Dip the potato patties in the gram flour batter, coating them evenly on all sides, and gently place them in the hot oil.
  • Now, cook on medium heat until one side turns golden, then flip and cook until the other side is also golden.
  • Prepare all the fritters in the same manner, placing them one by one in a plate. Your hot and delicious potato chops are ready to serve.

Notes

  • You can use baking soda in this recipe if you prefer, but I have not added it because the smell is not liked by anyone in my house. If you decide to use baking soda, add it while preparing the gram flour batter.
  • I am making this in mustard oil, but if you prefer, you can also cook it in refined oil.
  • If any of the spices are not available to you, you can skip them and use the remaining spices according to your taste preferences.
