Nenua is a vegetable available in the rainy and summer season. It contains a lot of water, due to which eating this vegetable helps in hydrating you for a long time.

Ingredients

  • Nenua – 1 kg

  • Green chilli – 2

  • Onion – 2

  • Garlic – 1

  • Ginger – 1 inch

  • Whole red chilli – 2

  • Cumin – 1 tsp

  • Salt – as per taste

  • Turmeric powder – ½ tsp

  • Vegetable masala – ½ tablespoon

  • Fenugreek seeds – ½ tsp

  • Mustard oil – 2 teaspoons

Directions (Method of making)

  •  First of all, we will peel, wash and separate the fresh Nenua and then cut it into small pieces.
  • After that, we will heat the pan on the gas add mustard oil to it and heat it, then add cumin seeds, fenugreek seeds and red chillies and fry for a few seconds. When the aroma starts coming out, add prepared garlic ginger paste to it.
  • Mix all these and fry them well. When the colour of garlic starts turning light brown, then add onion and green chillies and fry them till they turn light brown.
  •  Adding fenugreek to these vegetables makes them taste much better.
  • After that add Nenua in it and mix it well and also add a little salt here.
  •  So that the annual melts quickly.
  • Nenua releases a lot of water, hence do not add water to it, just keep one thing in mind it should be stirred carefully in between so that it does not burn.
  • After this, add turmeric powder and a little vegetable oil and mix it.
  • I have not added much spice to it because this vegetable is very good for health and spices are harmful to health.
  • And anyway, Nenua vegetable is very spicy and not everyone likes it. That’s why I used fewer spices in these, if you like more spicy then you can add more.
  • When this vegetable leaves water, we will open the lid and put it on high flame so that the water will take less time to dry and the vegetable will be ready quickly.
  • In this way, it takes about 10 to 12 minutes for our Nenua vegetables to be prepared.
  •  So our delicious Nenua curry is ready to serve with chapati.
